Baked Red and White Sauce Pasta

Red Sauce Pasta/ Spaghetti Recipe

Spaghetti Cooking: (In this recipe I have used spaghetti but you can use pasta instead & follow same steps)

  1. Take Handful of spaghetti, Break it from middle and Put it in hot water with some salt and oil and let it cook 95%.

  2. Once cooked drain spaghetti and save the water for sauce. Keep spaghetti on strainer if you have big one so they will not stick to each other

Steps to Make Red Sauce:

  1. Boil 3-4 big garlic cloves & a medium size tomato for 5-6 mins on medium flame, once cooled down blend it in blender.

  2. Heat a pan, add 2 TSP olive oil (or of your choice), chopped 2-3 big Garlic cloves & chopped 1 medium size onion to it.

  3. Once they are light brown, add tomato & garlic blend.

In seasoning:

  1. 1 TSP of Italian herb mix or 1/2 TSP of Dry Oregano & Basil each & to that add salt, some black pepper or red chili flakes, pasta water, Ketchup & little bit of lime juice.

  2. Mix them all & let them cook well for 3-4 mins on medium flame. Give it a stir for 2-3 times during cooking.

  3. Finally add Cooked Spaghetti & toss everything well on slow flame for 1-2 mins or until all spaghetti is well covered in sauce & Red Sauce Pasta is ready!

White Sauce Pasta Recipe:

Pasta Cooking: Cooking process of Pasta is same like Spaghetti explained above.

For White Sauce:

  1. In a pan add olive oil, Chopped 2-3 garlic & vegetables of your choice which goes well along this. I have added Broccoli & carrots.

  2. Season it with salt & cook until veggies are well cooked. Once veggies are completely cooked take them out in a plate. Now to the same pan at some oil and just a little bit chopped garlic.

  3. To that add 3 TSP whole wheat flour, & keep it stirring it until flour is slightly brown or leaves aroma.

  4. To that slowly add 1 cup of milk & whisk it on low flame for 3 mins.

  5. If you don’t have whisker like me than blend it in blender & add again to pan & cook for 2-3 min in low flame. It should not have lumps.

  6. To that add 1/2 cup of grated or a cube of mozzarella cheese.

  7. Now add seasonings - Salt, black pepper/ red chili flakes, 1 tsp Italian herbs mix or 1 tsp of dried oregano + basil leaves each. Let cheese melt a little & than add veggies + pasta to it. Stir everything until veggies + pasta is covered in sauce. (add pasta water if you think sauce is getting thicker) & White Sause Pasta s Ready!

Once both Pasta & Spaghetti is ready with sauce - in baking tray layer them.

Baking Steps:

1st put layer of red sauce Spaghetti

2nd layer of Grated mozzarella cheese (optional)

3rd white sauce pasta layer

4th Grated mozzarella cheese.

Now bake it on 180 C or 355 F for 10 mins & the DISH IS READY TO SERVE HOT!
